Mangoes have been one of my favorite fruits for a long time now. I didn’t really eat them growing up, but when I discovered them while living in Costa Rica 10 years ago, I fell in love. (And that’s actually where I met and fell in love with my hubby as well!)
In Costa Rica, mangoes are so abundant that people drive over them in the street and think nothing of it. There are mango trees everywhere, and people eat the sweet fruit both ripe and green.
In fact, one of my family’s favorite ways to eat mangoes is by slicing up not-quite-ripe mangoes, dousing them in a little lemon or lime juice and sprinkling them with salt. It may sound strange, but it’s actually very yummy!
A few weeks ago I was honored to attend a live webinar put on by The National Mango Board. This talk took my love for mangoes to a whole new level! I knew mangoes were healthy for me, but the webinar armed with me the facts on just how much mangoes are a super food that we need to incorporate into our diets!
