I can’t think of a more delicious way to showcase fresh strawberries than in a cold, lightly sweetened, bursting-with-juice strawberry pie. This dessert will be the show-stopper at your 4th of July picnic, or any time you serve it this summer!
You can enjoy cooked pies in the winter with frozen berries, but in the summer, seize the chance to enjoy no-bake pies with fresh berries! My recipe respects the natural sweetness of strawberries, adding only a hint of honey that accentuates rather than overpowers.

- 1. Wash and hull the strawberries. Put two cups of strawberries in a saucepan with the water. Simmer over medium heat for 10 minutes; crush the berries with a spoon or potato masher.
- 2. In a small bowl, mix the cornstarch and lemon juice. Pour slowly into the berry mixture, stirring constantly. Let the berries thicken and bubble for about 3 minutes, then remove from heat. Stir in honey.
- 3. Cut the remaining strawberries in half and pile them into the pie crust. Pour the cooked berries over evenly. Cover the pie with plastic wrap and chill thoroughly in the refrigerator, at least 2 hours. Serve with whipped cream or homemade custard ice cream.
