These creamy, tropical Pineapple Coconut Popsicles are the perfect frozen treat to celebrate the end of summer!

Where did the summer go??
Somehow, it was June, then I blinked, and now September is just around the corner.
My mind is racing with back-to-school preparations – everything from buying school supplies to what to pack for lunch (and what NOT to pack), to fast and easy breakfasts and dinners. (Here are over 50 healthy dinners ready in 30 minutes or less!)
But I’m determined to relish these final days of summer before they’re gone. Every.Last.One of them.
And these creamy Pineapple Coconut Popsicles are the just the way to do it!
Creamy Pineapple Coconut Popsicles with a Dairy Free Option
If you love the pineapple-coconut flavor combination as much as I do, you’ll adore these popsicles – they’re frozen pina colada perfection!
You could easily stir together coconut milk and crushed pineapple, pour it into a mold, and have a decent homemade popsicle a few hours later.
But, I’m telling you, taking a minute to add a few extra ingredients really makes this recipe exceptional!
We eat a LOT of homemade popsicles to get us through the triple digit Texas summers, and this is one of our very favorites!
If you’re dairy free, simply replace the cream with additional coconut milk and stir in the other ingredients as listed.
- • 6 oz. coconut milk
- • 6 oz. cream (can replace with additional coconut milk if dairy free)
- • 2 Tbsp. pure maple syrup
- • 1/4 tsp. pure vanilla extract
- • pinch sea salt
- • 2 cups canned crushed pineapple in pineapple juice (alternatively, can place fresh pineapple in food processor and pulse until it resembles the crushed)
- 1. Place all ingredients except the pineapple in a mixing bowl and whisk until well combined.
- 2. Stir about a cup of the crushed pineapple with juice, reserving the other cup for later use. Pour the pineapple-coconut mixture into popsicle molds, filling each 2/3-3/4 full.
- 3. Spoon the remaining cup of crushed pineapple and juice evenly into each mold, on top of the coconut-pineapple mixture, filling to the top.
- 4. Insert popsicle sticks and freeze for several hours or overnight.
- Makes approximately 10 pops.
