Ham, Cheese & Spinach Omelets



  1. With a fork, whisk together eggs and a splash of milk in a bowl.
  2. Heat a nonstick pan over medium-high heat until it is hot, about 3-4 minutes. Grease the pan with about a half-tablespoon of butter. Pour in eggs but do not stir. Season with salt and pepper and cover the pan with a lid. Cook covered for about 5 minutes.
  3. Remove lid and sprinkle toppings evenly across the top.
  4. Finish cooking the omelet in the oven. Set the oven to broil (high) and let the top of the omelet cook for 2-3 minutes or until done.
  5. Slide the omelet onto a plate, folding in half with the toppings in the middle.
  6. Serve immediately.
