Not sure what to do with all your leftover pumpkin puree? These pumpkin chocolate chip breakfast bars are simple, healthful and the perfect way to start the day!
Pumpkin Chocolate Chip Breakfast Bars (THM XO)
Ingredients
- 2 cups GF rolled oats
- 2 T. THM Gentle Sweet or Pyure
- 1 tsp. pumpkin pie spice OR cinnamon
- 1/2 cup pumpkin puree
- 1 tsp. vanilla
- 3/4 cup unsweetened almond milk
- 1/4 cup pumpkin seeds
- 1/4 cup sugar free chocolate chips
Instructions
- Preheat oven to 350F.
- Combine all dry ingredients.
- Mix wet ingredients into dry ingredients.
- Spread mixture into a greased 8x8 pan.
- Bake for 30 minutes.
Notes
These must be refrigerated. The first time I made them I did not refrigerate them, and they went rancid pretty quickly.
As written, this recipe is an excellent Trim Healthy Mama Crossover (XO) meal. All ingredients are on plan, and XOs are excellent for those in maintenance mode, pregnant and nursing women, and growing children to consume on a regular basis.
Men tend to have higher metabolisms and can also eat more XOs on a regular basis without gaining weight.
XOs are not "cheat" meals. They are a healthy and nutritious part of the Trim Healthy Mama eating framework. However, for those in current weight loss mode, XOs are best eaten occasionally and not for every single meal or for every single day.

Almond milk? Do you buy the one from the store? I tried it, then read that we weren’t supposed to eat the stuff in it either. 🙁 BUmmed b/c the taste was doable for me.

I found your website from From Scratch magazine and am so excited! Our 4 yo. son is allergic to wheat, dairy, egg, corn syrup, and acidic fruits. It has been so hard to find recipes that don’t have any of those things that are “treats”. I printed out your Breakfast Bars, and your Graham Crackers recipes and can’t wait to make them both! What a treat for him to be able to have something new for breakfast, and to be able to use the Graham Crackers recipe to cut out Christmas cookies for the first time! God Bless you!

Also, you use sucanat in a lot of your recipes. I was wondering if I can substitute white or brown sugar for that. I live in a small town, and am not sure I’d be able to find it locally. I know you can get it online, but if I don’t have to, (for frugality reasons), I’d rather not.
