16ozuncured hamchopped (add more for meat lovers)
Instructions
1. Grease 9” pie plate.
2. Cover bottom of plate with 1 cup cheese.
3. Spread 1⁄4 cup salsa on top of cheese. Fight the urge to use more than this, as it will make the quiche watery.
4. Cover salsa layer with 1 cup cheese.
5. Spread remaining 1⁄4 cup salsa on top of cheese. Fight the urge to use more than this, as it will make the quiche watery.
6. Beat eggs and milk until well combined.
7. Mix meat into egg mixture.
8. Pour egg mixture over cheese/salsa layers.
9. Bake for 45 minutes on 375F. Let “set” for 10-15 minutes before serving.
Notes
*I love to keep uncured ham lunch meat on hand to fry up for quick breakfasts year-round, use in sandwiches or wraps for my kids' lunches, and even serve as the protein portion of a light supper. It's a staple at our house!
