Ham and Cheese Crustless Quiche

Ingredients

  • 2 cups cheddar cheese shredded and divided (add more to make it extra cheesy)
  • 1/2 cup salsa divided
  • 1 cup milk
  • 3 eggs
  • 16 oz uncured ham chopped (add more for meat lovers)

Instructions

  • 1. Grease 9” pie plate.
  • 2. Cover bottom of plate with 1 cup cheese.
  • 3. Spread 1⁄4 cup salsa on top of cheese. Fight the urge to use more than this, as it will make the quiche watery.
  • 4. Cover salsa layer with 1 cup cheese.
  • 5. Spread remaining 1⁄4 cup salsa on top of cheese. Fight the urge to use more than this, as it will make the quiche watery.
  • 6. Beat eggs and milk until well combined.
  • 7. Mix meat into egg mixture.
  • 8. Pour egg mixture over cheese/salsa layers.
  • 9. Bake for 45 minutes on 375F. Let “set” for 10-15 minutes before serving.

Notes

*I love to keep uncured ham lunch meat on hand to fry up for quick breakfasts year-round, use in sandwiches or wraps for my kids' lunches, and even serve as the protein portion of a light supper. It's a staple at our house!
