These pumpkin chocolate chip muffins look amazing!! They're made with whole wheat and sucanat so they're nice and healthy, too! Freeze a big batch to have some handy for a quick breakfast.

Whole Wheat Pumpkin Chocolate Chip Muffins

Ingredients

  • 1 2/3 c. whole wheat flour
  • 3/4 c. sucanat or white sugar
  • 1 Tbsp. pumpkin pie spice you can make your own!
  • 1 tsp baking soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 2 eggs
  • 1 c. canned pumpkin
  • 1/2 c. melted butter or coconut oil
  • ¾ c. semi sweet chocolate chips

Instructions

  • Lightly spray a muffin pan with cooking spray or line with muffin papers. Preheat the oven to 350°.
  • In a large bowl, combine the dry ingredients. In a separate bowl, combine the wet ingredients. 3. Stir the wet ingredients into the dry; mix in chocolate chips.
  • Using a medium scoop, fill each cup ⅔ full with batter.
  • Bake 20-25 minutes at 350°.
