This isn’t your ordinary latte! With just a few ingredients, you can turn your morning coffee into a superfood that will fuel you up for the day!
I drink coffee every day, but I’ve learned how to turn this indulgence into a powerhouse superfood latte!
My morning superfood coffee is similar to bullet-proof coffee, but I think it’s even better!
A similar recipe can be found in the Trim Healthy Mama cookbook, but I’ll walk you through how I personally make my superfood coffee.

How I turn my coffee into a superfood:
1. Pour brewed coffee into a blender.
I pour my coffee into my Blendtec blender.
2. Add MCT oil to coffee.
This is step 1 in boosting my coffee into a superfood. I will add anywhere from 1 teaspoon to 1 tablespoon depending on if I am trying to get healthy fats or if I am avoiding a fat-heavy meal.
MCT oil is basically coconut and palm kernel oil that have been blended and liquefied. It’s excellent for your metabolism! In addition to adding MCT oil to my coffee, I’ll sometimes add it to salads and smoothies.

3. Add hydrolyzed collagen.
To make a good gut-healing coffee, I will add a full scoop of collagen, which contains 10 grams of protein. The brand I use recommends 2 scoops throughout the day to get the full benefits.
I had started using Perfect Supplements hydrolyzed collagen to make smoothies back in 2015. I didn’t like it at first, but I’ve gradually grown to love it!
Trim Healthy Mama recommends using collagen as a protein source. If you want to get more protein and you’re scared of protein powders, collagen is actually better because it’s basically just dehydrated bone broth. If you don’t like drinking bone broth, this is a good alternative!
Collagen is not only a great source of protein, it’s also good for joint health and digestion, as well as skin, hair, and nails, and it helps to keep your blood sugar balanced. It’s excellent for overall health!
You can add hydrolyzed collagen to smoothies, tea, juice or yogurt. It dissolves in hot or cold liquids, so you can pretty much use it in any liquid or gel!
4. Add protein powder (optional).
Occasionally I add a little bit of protein powder in addition to the collagen. Be cautious with your protein powders, as some are full of soy and can actually be harmful to your body! If I want to boost my protein intake, I add just a tiny amount of Nutiva hemp protein powder from Vitacost.
5. Add sunflower lecithin.
This is a trick I learned from Trim Healthy Mama to make my coffee nice and frothy! I use non-GMO sunflower lecithin in powder form.
6. Add stevia to sweeten (optional).
I add a dropper full of liquid stevia. If you don’t like your coffee sweetened, you don’t have to add it.
7. Blend.
Lastly, I blend all of the ingredients together for about 10 seconds.
The result?
A superfood beverage that looks like a latte from a coffee shop!

How much do these change the taste of your coffee? We love coffee, and most often drink it black, though occasionally I will add milk because with the Moka Pot (stovetop espresso), it really does taste like a latte. All this to say, while I like the idea of my coffee being another source of nutrition, I don’t think it would go over well if it changed the taste very much.

It doesn’t seem to change the taste for me; it just seems to make it “frothier.” THAT said, I am NOT picky when it comes to my coffee, so I would try it for yourself! LOL If you don’t have MCT oil, I could just use coconut oil. But the collagen is the trick here because it adds all the protein. Collagen is tasteless. I will say that the Trim Healthy Mama brand clumps for me when just stirring it in; I have to make sure I use the blender to do the whole sha-bang for that one, but the Perfect Supplements brand dissolves super easily, so I can just add it in and stir if I don’t want to go through the whole process with the blender.

This look amazing! Thanks for the great post Erin!

This is great info, however, I choose to stay away from anything palm oil because it comes from devastating deforestation in Indonesia. 🙁

Hi! I just purchased sunflower lecithin, and have never used it….how much would you use for each cup? Thanks!
sandi
I just purchased some organic sunflower lecithin. How much should I add to my latte? TIA!
J.
How much lecithin?
Christie
I use 1 Tbsp per large cup of coffee.

This is very similar to what I do! I blend coffee, MCT oil, grass-fed butter or ghee, marine collagen, and sunflower lecithin. It tastes really good, in case anyone reading this wonders about the marine collagen. It tastes like a super rich latte due to the butter or ghee. 🙂
