I didn’t grow up eating chili. In fact, I didn’t eat beans at all until I was an adult! When our family was struggling to buy groceries, I decided to give beans a try. A few years later, I tried my first chili recipe, and the rest is history.
I didn’t try white beans until I made the Wicked White Chili recipe from the Trim Healthy Mama Cookbook. Not only was I impressed with the flavor, but my favorite part of that chili recipe was that I knew it would be a crowd-pleaser when my family entertains guests (and it absolutely has been!).
This slow cooker white chicken chili recipe is similar but is a bit creamier than the first white chicken chili I tried.
The best part is that the low-fat cream cheese used to give it the perfect creamy consistency still keeps it low-fat per serving, making it the perfect THM “Energizing” meal!

As a mom of four, I need meals that will stretch and feed a crowd. Thankfully, this recipe fits the bill!
This slow cooker white chicken chili recipe is tailor-made for large families. While it technically serves six, my family of six usually has several bowls of leftovers every time I make this–and that includes feeding three kids who eat like adults plus my young son.
Plus, the hands-off cooking method of the slow cooker frees up my afternoons and evenings since I can easily prep this meal in the mornings right after dropping my four kids off at school!

Many traditional chili recipes call for thickeners, like flour, that contain gluten. However, this slow cooker white chicken chili relies on naturally gluten-free ingredients.
This is great news for my family, as all six of us have eaten a gluten-free diet since 2011.

On-Plan for Trim Healthy Mama
In addition to being gluten-free, this slow cooker white chicken chili is also on-plan for Trim Healthy Mama. The THM plan focuses on meals centered in protein and carb cycling to promote steady blood sugar levels.
This chili is designed to be an “Energizing” (E) meal on the THM plan.
Note: I’ve had some questions about the poultry seasoning in this recipe. Any poultry seasoning will work, but I actually make my own.
Equipment
- 1 slow cooker
Ingredients
- 2 chicken breasts
- 1 tbsp olive oil
- 1/2 onion diced
- 1/2 green bell pepper diced
- 14 oz. can green chiles
- 2 15.5 oz. cans great northern beans
- 2 tsp. ground cumin
- 1 tsp. coriander
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 2 tbsp. chicken or poultry seasoning
- 4 cups water
- 4 oz. reduced-fat cream cheese softened
- queso fresco crumbles optional topping
- fresh cilantro optional topping
- sliced jalepeños optional topping
- tortilla chips optional topping
Instructions
- Add the oil and chicken to the slow cooker.
- Add the diced bell pepper and diced onion, you can sauté them before if you wish. Add the can of green chiles.
- Then add the beans.
- In a mixing bowl, add the spices and water, then whisk until no clumps are present.
- Pour the mixture over the chicken and vegetables then set the slow cooker to high for 4 hours.
- Once chicken is cooked after 4 hours, remove and set aside.
- Chop the cream cheese into smaller bits and add to the chili. Let the cheese meal and then stir it into the mixture to thicken it up for a creamy texture.
- While the cheese melts, shred the chicken and add to the chili after you have mixed the cheese smoothly.
- Serve the chili topped with chopped cilantro, jalapeños, cheese crumbles and or tortilla chips. This recipe is a THM E as written, but it will turn into a XO depending on the toppings. Enjoy!
